Sunday Kisses…and Cupcakes!

Hope you are all enjoying your Sunday! It’s great weather today, but this is Oklahoma and that could change in a second. This being a long weekend for Memorial Day on Monday I am enjoying all the sunshine I can get!

Sunday just seems like a Pink day…a bit fancy and not ordinary. I even cooked salad today! No burnt pots or scorched fingers. Just spinach, strawberries, sliced almonds, dried cranberries and some Feta cheese. And since it is so hot out I used Tazo English Breakfast Tea and made a big pitcher and then filled it with cut up oranges. Delish!

Since it is officially summer here, the work schedule has changed to 5 a.m. until 2:30 p.m. and it is completely messing my sleep schedule up. But I will adjust. Eventually.

Speak The Truth…Even If Your Voice Shakes

It’s Friday for most of you but just Tuesday in my world. This morning I am sipping  chugging down multiple cups of tea with lemon and honey. With summer comes allergies and air conditioning. Both cause me misery. Thank goodness for Bigelow’s Lemon tea!

This week I had therapy per usual.  Normally he gives me enough forms to last a week and I fill one out each time I feel anxious or a panic attack. Writing where I was, what I was doing and how I dealt with it. Last week I only had one paper. And it was the day of my Eye surgeon appointment, so totally reasonable to feel anxious and scared. Then I told him about going out to several social occasions and that I was calm and in control the entire week. Without meds.

In his words, “That was very courageous of you. You were scared and anxious but you did it anyway.”

I had never thought of myself as courageous. I saved that for people who did big things like running into burning buildings. But when you have anxiety/depression sometimes just getting out of bed, brushing your teeth and getting dressed is courageous. Putting one foot in front of the other and moving forward sometimes takes Courage. 

It takes Courage to say out loud, “Hey, I’m not okay with this situation.”  It takes Courage to say, ” I suffer from PTSD and some days it sucks just to be!

Those are the times I jump on here and see how the rest of my people are handling their spoons for the day! And almost always I feel better. So thanks for that!

LEMON – BASIL BUTTER COOKIES

I promised I would share this one so here it is!Herb-scented shortbread cookie recipes (sage, lemon-thyme, rosemary, lemon-lime basil, lemon lavender):

The recipe makes about 6 dozen or so. Oven at 350 degrees for about 8 minutes. Very light golden color.

1 cup of fresh lemon-basil leaves ( If you can’t find the lemon-basil, just basil will do!)

13/4 cup of granulated sugar, divided

1 pound of butter, softened

1 Large egg

1/4 cup lemon juice

6 cups of All purpose Flour

Get your oven pre-heating to 350 degrees!  Grab your food processor and the basil with 1/4 cup of the sugar.

Beat the butter at medium with an electric mixer until creamy; gradually add remaining 1 1/2 cups of sugar, beating well. Add the lemon juice and egg, beat until blended.

Shape the dough into 1 inch balls and place about 2 inches apart on parchment lined baking sheets. Flatten slightly with bottom of  a glass, dipped in sugar.  Bake until light golden color. Cool and enjoy with a nice cup of Earl Grey Tea!

 

Fairy Chickens and Rogue Baby Bulls!

Welcome to The Farm! I’ve got a lot of pictures to share today, so let me explain them!

Some of these are from when we still had roosters. I won’t make that mistake again. Have you ever seen a rooster make love to a hen? It is not a pretty sight and OU Boy said Never again will one of our hens have to do that. Plus some of them are just plain mean. You don’t need a rooster to get eggs, just to fertilize them and turn them into chicks. But we don’t eat meat and we have enough hens so no roosters! Are they spoiled? Oh hell yeah! They will come and go at will as they are free range, but never leave the safety of the yard. They come inside and look around and leave. They get along with dogs, cows and baby bulls that get into the yard. Everyone is kind. The dog has a kind of boyfriend/girlfriend relationship with a bull and one of our hens laid her first egg and immediately went and stood in the middle of the unpaved road, waiting to commit suicide. She just wasn’t going to do that again I assume.

They will come sit in your lap and eat all of your dinner too! These are Rhode Island Red and Plymouth Rock. We have some Orpingtons also, but they are a bit more skittish.

Most of the time they are parked on a porch chatting or gossiping about the cows. They all have names and yes sometimes they dress up as fairies. They will also jump on your float in the pool and just chill.  The ducks are gone because ducks are just messy and nasty. Even the chickens wouldn’t talk to them.

If only humans got along so well!

TEA AND CAKE..IN A TRUCK!?

Yes, it seems that you can get just about anything these days from a truck, cart, or a VW bus. Flowers, coffee, tea, all types of cakes and sweet treats. I’m pretty sure that none of these sweet little things are here in the U.S. I wish they were. We do have some amazing food trucks, and not just Big Truck Tacos! If you haven’t been  to one of them then you are missing out on some really good Truck food.

One of our favorites is The Loaded Bowl! Organic, Vegan, GF, and really good comfort food! Cashew Mac and Cheese and the Down Home Bowl…oh yeah!

dOugh M G  is a vegetarian raw cookie dough truck! Try The Maverick! Peanut Butter goodness!

La Gumbo Ya Ya is a Cajun/Puerto Rican Fusion Truck. With Crawfish Boils and Blue Shell Crab Boils!  Yummy!

Wicked Hangry Burgers has every kind of burger and topping you can think of. My favorite is the Complainer…it has nothing on it!

The Sugar Shack Sweets & Treats has desserts and Carnival type food.

And there are so many more. Every weekend there is some event where they all show up and there is something for everyone!  What is your favorite Truck Food? What is mine? Well let’s just say I always know where Big Truck Tacos is going to be for the day…

Meet the newest love of my life…

Only one of the reasons the UK is looking better every day. We all know the other “orange” reason. When it comes to sweets and goodies, our friends across the pond have us beat to hell and back! I mean Mary Berry....do I need to say more? And don’t worry Paris, we see you and your Macarons and Tartes. My mouth is in love with European cooking.

If we had a drive-in cupcake place here, I would be in some type of 12 step program by now. But it is a really good idea. Something to think about….hmmm  Cowgirl Cupcakes? What do you think? There is a perfect building just down the road that used to be a Starbucks….just thinking out loud ( thanks Ed Sheerhan).

Tea News!  As much as I love my green Matcha, I have found the blue Matcha. And being the fickle tea lover I am, it is now my obsession!

Good Morning Sunshines!

Happy Sunday! WE are loving everything yellow today, especially that big fat sun overhead! Today is one of those days where I needed a major caffeine boost, but didn’t want coffee. No need to fear…Tazo Awake Breakfast Tea has an extra jolt of the good stuff. I don’t have much caffeine as a rule, but last night was a late one and it was that or the jumper cables.

I have no idea what came over me yesterday. It was like a protective shield where anxiety just could not reach. I went to 2 events outside of my house! Yes, I did. And without a keeper to hold my hand.

I met several interesting and nice people who should mean a fun and interesting summer for me! One older gentleman who explained all about harmony and not using the word try. Ever. I think he was probably at Woodstock.  Anyway it was very interesting and no one got shit faced drunk.  Win/Win! Although I did wake up with a killer headache and forgot to stir the honey in the bottom of my teacup and it was like a little bonus love at the bottom of the cup.

So now I’m taking my books and heading outside to bask in the sunshine and just be.

Taking Advice From A Flamingo

 :

You should know by now that I have a serious love for the Flamingo. Miss Charli Ava found some flamingo jammies at Old Navy and I was very disappointed they were only in Toddler sizes.  I did find this lovely cake stand though.

Advice from a flamingo? It really is good advice for all of us!

Wade into Life.  Get out there and participate in life! You don’t have to jump in, just wade in as far as you are comfortable.

Stand Out in a Crowd. Do you. Be different. Fashion is fashion but style is forever!

Spend Time With Your Flock.  Your flock doesn’t have to be your family either. Hang with people who let you be yourself and just get you!

Find The Right Balance. Unless you are a professional juggler, which I am not, you need to find balance in your life. Work, play, reflect, learn. LIfe is a balancing act!

Show Your True Colors.  Be who you are and be true to your core values. If you are as nutty as a fruitcake, own that shit! If you love to sing, then sing. If you love to dance, then dance. Be true to what you believe in and you can bet you’ll find others who feel  the same!

Keep Your Beak Clean.  Basically keep it on your face and out of other people’s business. Don’t do bad things or hang with unsavory characters. As much as we may not like it we are judged by the company we keep. And remember, if someone is comfortable gossiping to you then you need to re-evaluate your squad.

Dont’ Be Afraid To Get Your Feet Wet.  Try new things! You don’t have to commit to a life long love of something, but you can’t have an opinion if you haven’t at least dipped a toe in. Well except drugs…keep your feet out of there. But you are all smart people and know that. Right?

This was a just plain fun book to read. And I will definitely read the rest of them, as she has an excerpt in the back of this book, and it looks like she and Frankie are getting into more trouble!

Drinking Tea and Reading Books

That is about all we can do here at the moment. Power is sketchy this morning. We’ve already had two more storms  roll through and now the sun is shining but I hear we are gearing up for later this afternoon.

When the patio furniture started flying through the air, it got real around here! The winds were from 50 to over 90 mph. Here we were trying to catch the chairs and drag them inside, along with all the newly potted herbs. The rest of the night was spent trying to figure out if someone was at the door or was it just the wind.

Poor OU Boy took a tumble off a ladder yesterday as well. Cracked his head and a rib. So he was going to be of no assistance whatever if one of those tornadoes decided to hit. At some point the weather guys got so amped up I twitter offered a Xanax.

Since power is about as dependable as Twitter is today I will just say Stay Safe! And make sure you have on clean underwear.
