Last week my therapist told me I needed to start slowly spending time outside as long as it isn’t windy. And my corneal surgeon said it was okay if I wore the special cup. But I didn’t see any opportunities in the near future to wander in the woods
Yesterday one of us had an early morning staff meeting and I had another therapy appointment. And then...the early morning meeting was changed to today and the sun was blazing so I called and cancelled my therapy appointment and we loaded up the truck and headed to the lake and the woods! Totally spontaneous, which is so not me.
While I was laid out in my hot pink chair just chilling, my therapist called wanting to know if something was wrong. Nope, just taking your advice. Anxiety-0 Me-1
The first thing we saw was a Momma deer. Just right there looking at us. Then we saw the baby in the bushes behind her. I like to think we had a good chat. Moving on we found all kinds of treasure. Now remember this is the day after the long weekend, so campers had left behind some interesting things. Like 2 pairs of completely good flip flops, a few t-shirts, a tiny dump truck and a friend of Thomas the Tank Engine.
We found lots of flowers and tiny rocks and shells for crafting. We had such an amazing day that we’re doing it again today! I was going to ask OU Boy to ride the horses but he says the one has a sore on her right hind leg, so no horses today.
Yep, OU Boy should be back from his meeting in an hour and the truck is already loaded and gassed up.
I had actually forgot about the morning meeting and just wore my swimsuit to bed so I could just pull on a shirt and go. I actually have a Go Bag for the lake. So I’m ready with a bag full of bug spray, Panama Jack Tanning Oil, towels, sarongs, 6 swimsuits, a hat and a tablecloth. I refuse to eat on a picnic table without a cloth. Just uncivilized!

On this Memorial Day, I am proud to be from a family that puts service to Country first.
From the American Revolution where we were well represented by James Walsh and a lot of his Walsh brothers. As well on my mother’s side was Billy Fennell who fought in the War of Northern Aggression and was captured in action at Weldon R.R., VA. He was later released in a prisoner exchange and got his bum back to South Carolina to live out the rest of his days.
All of my Uncles fought in the Korean War, including my Daddy, who then met my Momma in Charleston and the rest was history!
My Uncle Floyd was Air Force Intelligence in Korea and came home to become an artist, author and Professor of Arts and Humanities.
One of my uncles on the Walsh side, was in 3 wars! Came home as a Green Beret.
My brother picked up the Navy bug and served in the Gulf Wars as an ATC on the USS Forrestal, put in his 20 years, retired and went to law school and is now a bigshot lawyer. Our cousin Krissy is the helo pilot there! Bad ass girl! Owns her own plane company and is an Engineer.
Shawn Patrick, my baby, chose the Air Force. Crew Chief on the mighty C-130 and he is back home safely, writing and being in your face about everything that matters. God, I love that boy!! I had numerous cousins fighting in Iraq and Afghanistan and not all of them came home whole. But they came home and we love them all.
If I forgot someone, just know I love you all and am proud to be part of this Walsh/Fairweather Clan.

Hope you are all enjoying your Sunday! It’s great weather today, but this is Oklahoma and that could change in a second. This being a long weekend for Memorial Day on Monday I am enjoying all the sunshine I can get!
Sunday just seems like a Pink day…a bit fancy and not ordinary. I even cooked salad today! No burnt pots or scorched fingers. Just spinach, strawberries, sliced almonds, dried cranberries and some Feta cheese. And since it is so hot out I used Tazo English Breakfast Tea and made a big pitcher and then filled it with cut up oranges. Delish!
Since it is officially summer here, the work schedule has changed to 5 a.m. until 2:30 p.m. and it is completely messing my sleep schedule up. But I will adjust. Eventually.

It’s Friday for most of you but just Tuesday in my world. This morning I am
sipping chugging down multiple cups of tea with lemon and honey. With summer comes allergies and air conditioning. Both cause me misery. Thank goodness for Bigelow’s Lemon tea!
This week I had therapy per usual. Normally he gives me enough forms to last a week and I fill one out each time I feel anxious or a panic attack. Writing where I was, what I was doing and how I dealt with it. Last week I only had one paper. And it was the day of my Eye surgeon appointment, so totally reasonable to feel anxious and scared. Then I told him about going out to several social occasions and that I was calm and in control the entire week. Without meds.
In his words, “That was very courageous of you. You were scared and anxious but you did it anyway.”
I had never thought of myself as courageous. I saved that for people who did big things like running into burning buildings. But when you have anxiety/depression sometimes just getting out of bed, brushing your teeth and getting dressed is courageous. Putting one foot in front of the other and moving forward sometimes takes Courage.
It takes Courage to say out loud, “Hey, I’m not okay with this situation.” It takes Courage to say, ” I suffer from PTSD and some days it sucks just to be!
Those are the times I jump on here and see how the rest of my people are handling their spoons for the day! And almost always I feel better. So thanks for that!

I promised I would share this one so here it is!
The recipe makes about 6 dozen or so. Oven at 350 degrees for about 8 minutes. Very light golden color.
1 cup of fresh lemon-basil leaves ( If you can’t find the lemon-basil, just basil will do!)
13/4 cup of granulated sugar, divided
1 pound of butter, softened
1 Large egg
1/4 cup lemon juice
6 cups of All purpose Flour
Get your oven pre-heating to 350 degrees! Grab your food processor and the basil with 1/4 cup of the sugar.
Beat the butter at medium with an electric mixer until creamy; gradually add remaining 1 1/2 cups of sugar, beating well. Add the lemon juice and egg, beat until blended.
Shape the dough into 1 inch balls and place about 2 inches apart on parchment lined baking sheets. Flatten slightly with bottom of a glass, dipped in sugar. Bake until light golden color. Cool and enjoy with a nice cup of Earl Grey Tea!
Welcome to The Farm! I’ve got a lot of pictures to share today, so let me explain them!
Some of these are from when we still had roosters. I won’t make that mistake again. Have you ever seen a rooster make love to a hen? It is not a pretty sight and OU Boy said Never again will one of our hens have to do that. Plus some of them are just plain mean. You don’t need a rooster to get eggs, just to fertilize them and turn them into chicks. But we don’t eat meat and we have enough hens so no roosters! Are they spoiled? Oh hell yeah! They will come and go at will as they are free range, but never leave the safety of the yard. They come inside and look around and leave. They get along with dogs, cows and baby bulls that get into the yard. Everyone is kind. The dog has a kind of boyfriend/girlfriend relationship with a bull and one of our hens laid her first egg and immediately went and stood in the middle of the unpaved road, waiting to commit suicide. She just wasn’t going to do that again I assume.
They will come sit in your lap and eat all of your dinner too! These are Rhode Island Red and Plymouth Rock. We have some Orpingtons also, but they are a bit more skittish.
Most of the time they are parked on a porch chatting or gossiping about the cows. They all have names and yes sometimes they dress up as fairies. They will also jump on your float in the pool and just chill. The ducks are gone because ducks are just messy and nasty. Even the chickens wouldn’t talk to them.
If only humans got along so well!
Yes, it seems that you can get just about anything these days from a truck, cart, or a VW bus. Flowers, coffee, tea, all types of cakes and sweet treats. I’m pretty sure that none of these sweet little things are here in the U.S. I wish they were. We do have some amazing food trucks, and not just Big Truck Tacos! If you haven’t been to one of them then you are missing out on some really good Truck food.
One of our favorites is The Loaded Bowl! Organic, Vegan, GF, and really good comfort food! Cashew Mac and Cheese and the Down Home Bowl…oh yeah!
dOugh M G is a vegetarian raw cookie dough truck! Try The Maverick! Peanut Butter goodness!
La Gumbo Ya Ya is a Cajun/Puerto Rican Fusion Truck. With Crawfish Boils and Blue Shell Crab Boils! Yummy!
Wicked Hangry Burgers has every kind of burger and topping you can think of. My favorite is the Complainer…it has nothing on it!
The Sugar Shack Sweets & Treats has desserts and Carnival type food.
And there are so many more. Every weekend there is some event where they all show up and there is something for everyone! What is your favorite Truck Food? What is mine? Well let’s just say I always know where Big Truck Tacos is going to be for the day…
Only one of the reasons the UK is looking better every day. We all know the other “orange” reason. When it comes to sweets and goodies, our friends across the pond have us beat to hell and back! I mean Mary Berry....do I need to say more? And don’t worry Paris, we see you and your Macarons and Tartes. My mouth is in love with European cooking.
If we had a drive-in cupcake place here, I would be in some type of 12 step program by now. But it is a really good idea. Something to think about….hmmm Cowgirl Cupcakes? What do you think? There is a perfect building just down the road that used to be a Starbucks….just thinking out loud ( thanks Ed Sheerhan).
Tea News! As much as I love my green Matcha, I have found the blue Matcha. And being the fickle tea lover I am, it is now my obsession!
Is this not gorgeous? And oh my the things you can bake with it! Like these coconut balls. Drool worthy!
I still love you green Matcha, but let’s be honest with each other, you look like mold. I said it. Sorry/Not Sorry. Today I am trying a recipe from my Sea Island Cookbook. It’s a favorite, Lemon Basil Tea Cookies. And trying out a Black Eyed Pea Crostini recipe for a tea party.
